This salad definitely satisfies the taste buds with the sweet, tart, and bitter all packed together. Collards are in the cruciferous family and may help prevent some cancers with their sulfur-containing compounds.

"Creamy" Cauliflower Soup with Chives

When I think of this soup, I think of silk, luxurious and smooth, almost as if it's too good to be eaten. But, let's be serious, if I made it, I'm going to eat it. HA! The secret to the creaminess is the cashews. You don't necessarily taste the cashews, but it's a great way to add richness to the soup.

​This was so simple, yet so delicious.  I felt fancy eating it just from the way it looked.  I packed this as a snack for a trip in the car.  I was never so happy to eat something so fresh while out and about. The tomatoes were marinated by the time I ate them, which made it all the better.

​This recipe comes from my good friend, Rachita Kenny, whom I was classmates with in graduate school. She helped keep me sane during the crazy times. I have her to thank for this magic! I have tweaked a few things to play around with the amount of sugar my scoby needs to survive and what's palatable in the end. This is the best I've come up with so far. Hope you enjoy it too!

This is a fabulous make ahead, delicious, and pretty crowd pleaser. It's grain and dairy free. All components can be made in advance without losing any flavor, texture or just plain goodness. It can all be done in one hour, which is the best part. I am also not a measurer (Is that a word?) so feel free to tweak, add, and/or delete ingredients you may not love. The amount of garlic I used may offend you, but in my world, there's never too much garlic! ​

This recipe was an extremely pleasant surprise and then I could not stop eating it! I was concerned the beet flavor would completely overtake the entire dish, but that was not the case. It blends well with the tomatoes and cucumber to give it a balanced finish.

This is full of vitamin A, vitamin C, and folate, iron, and fiber, so eat up!
