This is a fun dish to do for a dinner party, as each person can get their own packet on their plate. It switches it up from the normal service. The onion sauce can be made in advance, so it would just be putting the packets together and throwing them in the oven.

This might be one of my all-time favorite recipes! I adjusted it from this NYT recipe. I took out the sausage and made it dairy free. I don’t even know what the heck makes this taste so good, but you HAVE to try it! Sometimes I get serious cravings for greens- thank goodness my body knows what's up and let's me know I'm lacking something. This salad definitely satisfies the taste buds with the sweet, tart, and bitter all packed together. Collards are in the cruciferous family and may help prevent some cancers with their sulfur-containing compounds.
This recipe comes from my good friend, Rachita Kenny, whom I was classmates with in graduate school. She helped keep me sane during the crazy times. I have her to thank for this magic! I have tweaked a few things to play around with the amount of sugar my scoby needs to survive and what's palatable in the end. This is the best I've come up with so far. Hope you enjoy it too! This is a fabulous make ahead, delicious, and pretty crowd pleaser. It's grain and dairy free. All components can be made in advance without losing any flavor, texture or just plain goodness. It can all be done in one hour, which is the best part. I am also not a measurer (Is that a word?) so feel free to tweak, add, and/or delete ingredients you may not love. The amount of garlic I used may offend you, but in my world, there's never too much garlic! Serves 3-4 This recipe was an extremely pleasant surprise and then I could not stop eating it! I was concerned the beet flavor would completely overtake the entire dish, but that was not the case. It blends well with the tomatoes and cucumber to give it a balanced finish. This is full of vitamin A, vitamin C, and folate, iron, and fiber, so eat up! |
