This was so simple, yet so delicious. I felt fancy eating it just from the way it looked. I packed this as a snack for a trip in the car. I was never so happy to eat something so fresh while out and about. The tomatoes were marinated by the time I ate them, which made it all the better. Serves: 2 Ingredients:
4 heirloom tomatoes, cut into 1" pieces 1/2 c cherry/grape tomatoes, halved 4 c arugula 1 1/2 T evoo 1 T aged balsamic vinegar Sprinkle sea salt Sprinkle Pepper Instructions: 1. Place 2 c arugula in two containers. 2. Place tomatoes on top of arugula. 3. Drizzle with evoo and aged balsamic vinegar. 4. Sprinkle with sea salt and pepper.
