​Yes, it is stripetti and not spaghetti, although very similar. I found this guy at Whole Foods while perusing the produce section with my friend. It’s a mixture of a spaghetti squash and delicata squash- makes sense considering the inside is more like a spaghetti squash, but it looks like a giant delicata squash on the outside.

It’s got a lot of fiber, vitamin A, vitamin C, calcium and iron, supporting the eyes, skin, immune system, bones, and cell health. ​This has to be one of my most favorite salads of all time, plus it's super easy to make. It is incredibly refreshing and nutrient dense. It's filled with prebiotic fibers, folate, manganese, copper, potassium, vitamin C, iron, vitamin A, and has anti-inflammatory properties.

​This was so simple, yet so delicious.  I felt fancy eating it just from the way it looked.  I packed this as a snack for a trip in the car.  I was never so happy to eat something so fresh while out and about. The tomatoes were marinated by the time I ate them, which made it all the better.

Tomato-Beet Gazpacho

This recipe was an extremely pleasant surprise and then I could not stop eating it! I was concerned the beet flavor would completely overtake the entire dish, but that was not the case. It blends well with the tomatoes and cucumber to give it a balanced finish.

This is full of vitamin A, vitamin C, and folate, iron, and fiber, so eat up!
