If you're already a brussel sprouts fan, you'll fall more in love with these gems. If you're not a brussels sprouts fan, these will be sure to change your mind! I think I might have eaten 2 cups the first time I made them. HA! Whoops. They may be little, but they pack a HUGE nutrient punch- vitamin K, vitamin C, vitamin A, folate, manganese, potassium, vitamin B6, vitamin B1, and iron. Spicy and sweet, you can't go wrong with these!
Ingredients: 2 lb brussel sprouts, ends trimmed and halved 2 T evoo, divided 2 T sriracha 1 T honey 1/2 t garlic powder, or 1 clove garlic, chopped 1/2 t sea salt 1/4 t pepper Directions: 1. Preheat oven to 425. Cover baking sheet with parchment paper. 2. Toss brussel sprouts with 1 T evoo, sea salt, and pepper. Spread on baking sheet. 3. Roast brussels sprouts for 15 minutes. 4. Meanwhile, mix together the remaining tablespoon of olive oil, sriracha, honey, and garlic powder (or fresh garlic). 5. Remove brussel sprouts from the oven and toss with the sriracha mixture. Place back in the oven for another 15 minutes. 6. Enjoy!
