I've gotten so many requests for this recipe and quite frankly, I'm not surprised. They look like french fries, yet they have a much more complex flavor. If you're looking to take it up a notch with your meal, I'd highly suggest these as a fun side dish. They're crispy on the outside and slightly creamy and sweet on the inside. YUM! Hey- if you have kids, you may be able to trick them into eating more nutrients! They're filled with fiber, vitamin C, folate, manganese and potassium. It's a win-win for everyone!
Ingredients: 2 lbs parsnips (not turnips - I know, it gets confusing.) 1-2 T evoo 1/2 t sea salt 1/4 t pepper Directions: 1. Preheat oven to 425. Cover baking sheet with parchment paper. 2. Peel and trim ends of parsnips. Cut into 2" x 1/2" matchsticks. 3. Toss parsnips with olive oil, sea salt and pepper and spread on baking sheet. 4. Bake in the oven for 35-45 minutes, tossing midway through. (Roasting time may differ depending on your oven. If you have a convection option, this will make them extra crispy on the outside. Reduce cooking time to 20-30 minutes if using the convection feature.)
