tuna salad

I get tuna cravings maybe three times a year. The best way to take care of it? Make my incredibly tasty tuna salad.  You won't regret it. I promise!

​This meal is always a real treat for me. I love having it with some bread and butter pickles from the farmers' market and a handful of vegetable chips.

The best way to serve this sandwich is with a heaping mound of arugula and a couple slices of tomato on some gluten free bread. If you're not into the whole bread thing, you can serve it over the arugula and tomatoes and it will be just as good.

Ingredients:
1 can tuna (Wild Planet is best, but anything pole and line caught is the most environmentally friendly fishing method for tuna)
2 t avocado oil mayo
2 t strong Dijon mustard (I like Trader Joe's- it almost burns off your nose hairs!)
1 T pickle relish (I wish I could give a brand, but my mom makes this, so hers is the best. Yes, I'm biased.)
1 1/2 t apple cider vinegar
1/4 t sea salt
1/4 t garlic powder
Sprinkle of black pepper

Instructions:
1. Mix all ingredients together in a bowl and serve over arugula or on a sandwich with arugula and tomatoes.
